Gluten-Free Wrap in a Snap!

These days, chances are that many of us are gluten intolerant or know someone who is!

I would be remiss if I didn’t point out the importance of maintaining healthy digestion as a means to address gluten intolerance.

Some people are born with imbalances such as celiac disease, but for many of us, our gluten intolerance is a result of diet and lifestyle issues that need to be addressed. Especially, the need for agni (digestive strength) that is well balanced.

When one’s agni is balanced, substances like good quality gluten and dairy can be enjoyed in moderation.

That being said, one of the tenets of Ayurveda is seasonal eating. The body produces different enzymes at different times of the year. When we eat seasonally, we can digest foods well because the body is prepared with the proper enzymes. Eating out of season can cause intestinal distress of various kinds when the body doesn’t have the proper enzymatic secretions at its disposal.

You can enjoy the veggies in this recipe or avail yourself to the plentiful produce your local farmer’s market our own backyard is serving up. Then, you will be sure to know you are eating seasonally.

RECIPE: SUMMER GLUTEN FREE WRAP with AVOCADO SPREAD

2 Servings.

Ingredients

2 large collard green leaves or other sturdy green leaf that lends itself well to being rolled into a wrap
1/2 bell pepper, cut into strips
2 stalks celery, chopped
Generous handful of chopped cilantro or parsley
1 cup bean sprouts
Some thin slices of cucumber
A few thin slices of red radish or daikon (just a few to enkindle the digestive fire-agni)
1/2 cup pumpkin or sunflower seeds

Avocado Spread

Mash a very ripe large avocado in a medium size bowl and blend well with the following ingredients:

1 tbs. olive oil (optional)
1/2 tsp. each ground: cumin, coriander, fennel
1/4 tsp. ground turmeric
Juice of half a lemon or lime
Pinch Himalayan pink salt


WRAP IT UP

  1. Divide the avocado spread in half and slather onto each leaf.
  2. Divide the remaining ingredients in half and pile them neatly onto each leaf.
  3. Roll up, give thanks, and enjoy!
