  • 1 pinch hing (asafetida)
  • ½ tsp black pepper
  • 2 Tbsp ghee, sesame oil, or olive oil
  • 1 tsp salt

Directions

  1. Boil cauliflower and broccoli in water on low heat until tender. Set aside.
  2. Warm ghee in a pan and add spices until aromatic.
  3. Combine spices with vegetables and add salt.
  4. Mash lightly and serve hot.

Kapha-Balancing Khichadi

Ingredients

  • ¾ cup pearl millet
  • ½ cup split moong dal (green gram)

For sauté and garnish

  • 1 tsp cumin
  • ¼ tsp turmeric
  • 2 tsp coriander
  • 1 tsp cinnamon
  • A few curry leaves
  • 10–12 black peppercorns
  • 1 tsp rock salt
  • 1–2 tsp ghee

Directions

  1. Cook millet and moong dal with 5–6 times the amount of water on low heat.
  2. Add more water if needed until soft.
  3. Sauté spices in ghee.
  4. Mix spices and salt into khichadi and garnish with ghee.

  • Rice-based khichadi is recommended for fever or digestive upset.
  • Millet khichadi is excellent for Kapha due to its drying and heating qualities.

Pearl Millet Flatbread (Bajra Roti)

Ingredients

  • 2 cups bajra flour
  • Water as needed
  • Ghee for serving

Directions

  1. Knead bajra flour with water into a soft dough.
  2. Divide into large balls.
  3. Dust with flour and flatten by hand.
  4. Cook on a hot pan, flipping once dry.
  5. Apply ghee and serve hot.

Leafy Greens with Chickpeas

Ingredients

  • 4 cups chopped baby spinach
  • 1 cup cooked chickpeas
  • 2 tsp coconut oil or ghee
  • 2 tsp coriander seeds
  • 1 tsp cumin seeds
  • ½-inch ginger, chopped
  • 2 Tbsp fresh coriander leaves
  • 2 Tbsp powdered cashews
  • Salt to taste
  • 1 Tbsp lemon juice

Directions

  1. Cook spinach with ginger and coriander leaves for 5 minutes.
  2. Heat oil, add cumin and coriander seeds, and sauté until aromatic.
  3. Add spices to spinach and mash gently.
  4. Add chickpeas and simmer.
  5. Stir in cashew powder, lemon juice, and salt.
  6. Serve hot with millet rotis.

Sesame Seed Rolls with Ginger

Ingredients

  • 1 cup black sesame seeds
  • ¼ cup cashews
  • 1 cup powdered jaggery
  • 1 cup water
  • 1 tsp cardamom powder
  • 1 tsp ginger powder
  • Ghee for shaping

Directions

  1. Roast sesame seeds on low heat and grind coarsely.
  2. Dissolve jaggery in water and add ginger powder.
  3. Stir in cashew powder and sesame seeds.
  4. Shape into small balls using ghee.

Steamed Beets

Ingredients

  • 2 whole beets, skin on
  • Dash apple cider vinegar
  • Dash olive oil
  • Salt and pepper to taste

Directions

  1. Steam whole beets for 30 minutes.
  2. Cool slightly, then rub off skins with a paper towel.
  3. Slice, grate, or cube.
  4. Toss lightly with oil, vinegar, salt, and pepper.
