Recipe: Easy Vegan Coconut Macaroons

Here is a quick and easy dessert recipe to excite the taste buds of any and all chocolate lovers.  And if you need another excuse to give these coconut chocolate macaroons a try, you’ll love that raw cacao powder promotes heart health while it lifts your mood.

And there’s more—your brain, bones and teeth all benefit from the magnesium in raw cacao,  and studies support its beneficial effect on blood pressure and cholesterol.

If you aren’t familiar with coconut powder, it is made from dehydrated coconut milk to create a powder similar to dried milk powder.  

Ingredients
1/2 C coconut powder (you could also use 1 1/2 cups finely shredded unsweetened coconut if you want some texture)
1/3 C raw cacao powder
1/4 tsp sea salt
1/2 tsp pure vanilla extract
1/3 C maple syrup

Preparation
Mix ingredients together in a food processor, or combine by hand, to form a paste-like dough. Form into balls. That’s all there is to it!  Enjoy!
