RECIPE: Carrot Ginger Soup

Ingredients
- 4 medium carrots, cut into 2–3 inch chunks
- 1/2 small onion, roughly chopped
- 2 garlic cloves, peeled and chopped
- 2 tablespoons ghee
- 1/2 teaspoon salt
- Pinch of white pepper
- 1 tablespoon chopped fresh ginger
- 1/2 cup almond milk
- 2 cups low-sodium vegetable or chicken broth
Directions
- Heat the ghee in a pan over medium heat. Add the carrots, onion, garlic, and ginger. Sauté until the onion becomes translucent and the carrots begin to soften, about 3 minutes.
- Add the broth and stir gently for about 1 minute.
- Transfer the mixture to a blender or food processor along with the almond milk, salt, and white pepper. Blend for 2–3 minutes, or until smooth. Alternatively, use an immersion blender directly in the pot.
- Return the soup to a medium-sized pot and heat gently until warmed through.
- Pour into mugs or bowls and garnish with fresh cilantro if desired.
